30 Meals in 30 Days: Spaghetti Squash Mac 'N' Cheese & Veggie Sauce

Since my success with Spaghetti Squash Pad Thai I'm feeling pretty confident about the awesomeness that is Spaghetti Squash. A friend from highschool (who doesn't have access to Spaghetti Squash while living in Scotland) suggested I try these recipes. So I did! This one's for you, Jess.

Also, this is GAPS diet friendly.
This recipe is actually a combination of two - one for the sauce & one for the 'mac' & cheese

Here's how to make the tomato sauce.

Fry 2 peeled & chopped carrots, 1 onion, 2 celery stalks, 1 can of crushed tomatoes in 2 tsp. of olive oil. Simmer for 1 hour, and add fresh herbs and spices of your liking.

Here's how to make the mac & cheese.

Cut a spaghetti squash in half, smother in oil & bake in the oven at 350 for 1 hour.

Toward the end of the hour, heat 2 tbsp flour, 1 cup milk, 1 cup cheese of choice in a saucepan.

Remove from the oven, pull out the squash and place in a bowl with the cheese mix.

Combine. Top with 1/4 cup bread crumbs & 1/4 cup flax seed.

Bake at 350 for 20 minutes.

Serve with the tomato sauce & a fresh avocado.

Here's how we're rating it:
Taste value: 8/10 - I would have preferred for the sauce to have more flavour. Next time!
Simplicity value: 7/10. Aside from cutting a spaghetti squash in half it was pretty straightforward. Lots of time chopping veggies, too.
Appearance value: 8/10. It doesn't look like pasta by any means but it doesn't look like slop!
Entertainment value: 7/10 - Would be good for vegetarians, but if you ate meat you'd probably feel as though something major was missing. There are some vegetarian meals which leave meat-eaters satisfied but I don't think this would be one of them.
Coolness value: 9/10. Oh the things you can do with spaghetti squash!

  1. sounds yummy, I am always WANT to try making new healthy recipes, but often am not super successful! And I loved reading about a day in your life over at Our Nest in the City. Your little girl is adorable!

  2. 1) Okay, I'm going to have to try cooking with spaghetti squash. I ordered it a restaurant once, but I've never cooked it at home. These awesome recipes leave me with no excuse not to give it a shot.

    2) I LOVE that you have a community garden. I've thought about trying to start one in our apartment complex, but we are only going to be here for a year, so I don't think I would be able to see the project through. Also, I've never gardened a day in my life.

    1. You totally should! It's way easier than it even sounds. You chop it in half, put it in the oven for an hour, and then scrape it. On its own it doesn't taste awesome but the additions are so simple!

      And yes I love it too! We know someone locally who runs it and joined through her, and I've loved every minute of it. We're new gardeners as well but are learning soooo much from more experienced gardeners. Things about tomatoes I never knew...
